Ingredients
  

Chicken Marinade

  • 1 lb boneless skinless chicken thighs cut into 1-1.5 inch pieces
  • 3 tbsp Greek yogurt
  • 2.5 tbsp tomato paste or up to 3 tbsp to taste
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder

Instructions
 

  • Preheat oven to 400F. Involve your child by letting them help with safe tasks, like arranging the oven rack in the middle position.
  • Grease the baking dish with olive oil or non-stick spray.
  • Cut chicken thighs into 1-1.5 inch pieces. Trim off any tendons for better texture.
  • In a mixing bowl, add the chicken and all other ingredients. Mix well to coat the chicken evenly.
  • Place the mixture in the baking dish and bake for about 40 minutes, or until the internal temperature reaches 165F.
